Is a 15 yard enough for a kitchen remodel?

For a kitchen alone, generally yes, including cabinets, counters and flooring. If a bathroom is coming out in the same phase, step up to a 20.

Does an older bench home change the recommendation?

Often, yes. Older bench and foothill housing produces dense plaster and heavy framing, so the 15 yard filled properly is usually cheaper than a larger container that hits its weight limit early.
